Pour the sweetened condensed milk into a bowl and add the hot water. Whisk until homogeneous.

Step 4:

In a wide bottomed pot that is taller than your yogurt containers, make a bath for the containers: Heat up enough water to a near boil that it will come most of the way up the sides of your yogurt containers when they are immersed in the bath. In another pot or tea kettle, heat up additional water.

Step 5:

After water is hot, turn off heat and place filled yogurt containers into bath.

Pour in additional water until water level reaches nearly the top of yogurt containers. (Hint: Use a funnel to pour the water into the pot so no water splashes into the yogurt containers.)

Step 6:

Place a towel over pot, being careful not to let it droop into yogurt containers and let yogurt set in the water bath.

After the water has cooled completely (@ 4-5 hrs total bathing time) the yogurt should be fairly set (it will thicken a bit more when refrigerated, but not much.)

Remove from bath, put lids on jars and store in fridge until ready to serve.

– If yogurt is sweet, but not set after water has cooled, most likely the water bath was too hot for too long. Next time try starting with a bath that isn’t so hot.

– The yogurts can be kept up to a week in the refrigerator or stored in the freezer for up to 6 months.

– If you don’t own a big enough cooler, you can use a regular large bucket and fill it with warm water, but make sure it’s a very warm/hot day to get a good consistency.

– You’ll have to “seal” the bucket with several layers of plastic wrap and then cover it with aluminum foil.

– I usually use the giant cooler that we have for summer picnics. It’s much more convenient.

There are many variations of Canh Chua. All include tomatoes, however, others may also include taro stem, okra, celery, bean sprouts and/or pineapple.

What makes Canh Chua my all-time favorite soup is what finishes it off. When the soup is ready to serve, it is topped with aromatic Thai Basil leaves or rice paddy herbs and a generous heap of freshly fried garlic.

Just imagine the aroma when the soup is being served. It’s nothing short of an orgasm for the nose!

In the below recipe, I kept it simple by using tomatoes and bean sprouts. For the protein, I used snakehead fish, but I also love to use catfish when I have it on hand.

2 teaspoons fish sauce

8 cups water

5 tablespoons granulated white sugar

2 cups bean sprouts

2 tablespoons vegetable oil

2 cloves garlic (mince)

Step 1:

Marinate catfish with fish sauce at room temperature for at least 15 minutes. Add water (8 cups) to a medium-sized pot and bring it to a boil.

Step 2:

Add snakehead fish, along with its juices. Cook for 15 minutes on low heat. Use a mesh or small spoon to scoop out any scum that floats to the top.

Step 3:

Add sugar, tamarind powder, chicken stock powder and salt. If you are using tamarind pulp instead of tamarind powder, ladle a cup or so of hot water from the pot into a small bowl. Add the tamarind pulp to the hot water.

Step 4:

Smash the pulp with the back of a spoon until it separates from the seeds. Strain the pulp back into the pot, discarding any tamarind seeds that remains.

Step 5:

Add tomatoes and cook for 2 minutes. Turn off heat. Add the bean sprouts. The residual heat will cook the bean sprouts.

Step 6:

In a small sauce pan, heat up the vegetable oil high and fry the garlic until golden brown. Transfer fried garlic and oil to the pot.

Step 7:

Top with basil and chili pepper. Serve with Vietnamese Caramelized Clay Pot Cat Fish (Cá Kho Tộ) and steamed white rice for a complete meal.

You’ll want the chicken to have ample coating, so make sure every inch gets dredged. Remove from the bag and lay it on a sheet of waxed paper to dry. Repeat with the remaining chicken.

Test Kitchen tip: Plastic bags work wonders with cutting down the mess, but you can always combine the breading ingredients in a large bowl and toss the chicken that way.

All of the chicken pieces have been coated and placed on the parchment paper and arranged so they are not touching.
